Week 8: Milk and Milk Products

During this week's lab we discussed milk products and alternatives. We got to taste many different types of milk, besides just regular cow’s milk which we are used to. We tried soy milk, coconut milk, almond milk, rice milk, and even chocolate soy milk! Yum! More and more alternatives have been put out in recent years due to a rise in lactose intolerance. These "milks" are enriched with calcium and other nutrients that are found in cow's milk. Several discussions and recipes showed us how different kinds of milk affect the outcome of your product. We had lots of yummy treats to sample this week like Key lime pie, fondue, and manicotti. We also made some cheddar cheese crackers, and some pumpkin tofu cheesecake!   1. Today we worked with different variations of milk products. My group made chi tea and 2 different types of smoothies. I really enjoyed the chi tea, but I would have liked it better if we used soy milk because I am lactose intolerant. My favorite was the pumpkin cheesecake, and to my surprise i was able to eat it because it was make with tofu instead of cream cheese. I can not wait to make this at home!

  2. I really enjoyed today's class. It was so interesting trying all of the different milk substitutes in the beginning. I have tried almond milk before, but other than that they were all new to me. I wasn't a huge fan of the rice milk but the the chocolate milk and the rest were very good. I think my favorite recipe that was made today would be the chai tea and the pumpkin cheesecake. Overall it was a lot of fun and I can't wait to make the recipes again!

  3. Today in lab my group made Spanakopita. This is something I have never heard of before so I was excited to make it. My group did a great job and it came out delicious. All the other foods we tried today were also delicious. My favorites were the cheddar crackers and the pumpkin cheesecake. I was so surprised to find out that the pumpkin cheesecake was made with tofu. I would have never guessed that but I thought it tasted great. There were definitely a lot of recipes this week that I will be making again in the future.

  4. One part of today's lab I liked was having the opportunity to try the different types of milk. Normally I would never consider buying them, but after tasting them weren't so bad. A few of them had an interesting taste, but overall they were manageable. Of all the recipes in lab today, I was shocked that the cheesecake was made with tofu. Such a great idea for vegetarians to be able to experience the same desserts as non-vegetarians. My favorite recipes from today's lab that I hope to have again were the cheese crackers, the manicotti, and the spankopita. So delicious!

  5. Cassandra Raugh Section 02 Group 02

    Today's lab benefited me more than expected. In my job outside of school, I counsel athletes. Milk is a huge part of virtually all of my athletes' diets. So it was very interesting to try different types of milk that aren't cow's milk. There are some athletes too who don't necessarily prefer or tolerate cow's milk well, so knowing about the 5 milks tasted in class will be very helpful.

    Today I also helped to make fondue, which I never realized was so labor intensive! To my surprise, I actually liked the fondue as well. Just another recipe to add to the old "to do list". At some point, I'm hoping to find time to cook and whip up some of these foods in the recipes.

    I also loved the thai soup!! Probably my favorite food in class. I've always been a big fan of thai food, so this soup was right up my alley. I didn't realize the milk used to make the soup started to curdle. The curdling of the milk didn't even affect the taste of the soup, it still tasted fantastic!

    I do feel this class is helping me to be a better nutritionist. Cooking, knowing recipes, and being able to talk about different foods is so important in counseling anyone on food and nutrition. I'm really grateful that this class is creating a base knowledge for me in the cooking area.

  6. I found today's taste testing very interesting. I am luckily not lactose intolerant and so have never really had reason to try milk alternatives. Of those I tried today, the coconut milk was my favorite, although I would not directly drink it, but would use it for cooking and baking applications since it has a nice, strong fruity flavor. With regards to the recipes, I was really intrigued (and at first skeptical) or using crepes in place of pasta for the manicotti. It turned out to be really tasty and had a pleasant texture. It was also a lot easier to fill than trying to stuff large noodles!

  7. Lab today was based on milk and milk alternatives. I liked having the opportunity to taste the different kinds of milk alternatives. I've had almond milk before and I usually keep some in the house for baking or to put in my tea because I feel like it lasts longer than cow's milk which always goes bad on me before I use it all. I can vaguely remember having had soy milk years ago and not really caring for it, so since then I have never had it. While I think I will stick with the almond milk, the soy definitely wasn't as bad as I remembered and I did really like the coconut. The rice milk wasn't my favorite on its own, but I think if I were to bake with it or put it in something that it would be fine. I think it's important to be aware of alternatives like that, especially because we may encounter many people who can't or won't drink cow's milk in our future profession.

    My unit made the rice pudding today. I was a little worried about how it would turn out since the coconut milk had separated in the can. Apparently that's normal but I was unaware of that until after we had left lab. I was very impressed by all the food today - the spanakopita were my favorite, but I was also really impressed by the pumpkin cheesecake. I'd seen baking recipes calling for silken tofu before, but I'd also dismissed them thinking that tofu was too labor intensive based on my experience with cooking firm tofu. I was pleasantly surprised, and I felt like the cheesecake group was one of the first done with their recipe. Having seen how easy and tasted how good silken tofu can be in baking, I'll have to reevaluate how I feel about other recipes using it.

  8. This lab was as interesting as ever. I really enjoyed trying the varieties of milk! My group made the key lime pie and we definitely had fun trying to decorate the top with whipped cream. It was my first time whipping heavy cream to make whipped cream and it definitely took longer than anticipated. The fact that surprised me the most during the lab was the vegan cheesecake which had no eggs at all. It was my first time tasting a vegan cake and i really enjoyed it. Who'd knew tofu could make a cake taste as good as the non-vegan choice.

  9. Today my unit made the indian chicken soup. It was surprising to see how fast the almond coconut milk in it started to curdle when it just started simmering. The taste of it was good but unfortunately the texture was unpleasant because of the milk. I was glad that we got to try all the different types of milk that are available. The best was the chocolate soy milk, but I still would not choose to buy that over regular milk. I don't know why I was so surprised by the almond milk's taste. It obviously tasted like almonds but I guess I was not expecting it to be that strong of an almond taste. I also really enjoyed the chai, the fondu, and the cheesecake. All of those are things I would make again for myself. Especially the cheesecake because I have roommates that are vegetarian and really like tofu.

  10. Today my group made the pumpkin cheesecake... it was made with tofu! I thought it was crazy I never had tofu before, if I liked pumpkin pie i would have loved this recipe. I loved the manicotti it was so delicious. It was surprising to see how the crepes resembled pasta so much. I definitely loved the chai tea, I love chai tea. I enjoyed the cheddar crackers, I heard a lot of classmates saying how much they tasted like cheez-its. Oh yeah and I loved the fondue!

  11. Coming from a girl who just recently discovered how delicious almond milk was, I was happy to try others in lab on Tuesday. However, I will never purchase rice milk. I will just stick to almond milk. I was really surprised that the pumpkin cheesecake was made from tofu! Never would have guessed. Our group made the cheddar cheese crackers. I never would have thought we would have made them in lab, let alone ever in my lifetime. But they were quite tasty, maybe not the healthiest option but a good little snack.

  12. This weeks lab allowed us to try out different types of milk and alternative milk products. I absolutely love milk and almond/coconut milk as well, so I was very excited for this lab. My unit made key lime pie topped with homemade whipped cream and it was fantastic! I never knew how simple it was to make a graham cracker crust. The chocolate cheesecake brownies were definitely top on my list especially because they had just come out of the oven. The rice pudding was my least favorite because it was kind of bland compared to everything else we tried. Overall I liked everything we tasted in lab today and I look forward to trying out some recipes at home!

  13. Well this week had tons of Dairy. I really enjoyed making the Chai Tea. I'm a huge tea drinker and have never made tea that way with all the ingredients that we used. I'm used to just the tea leaves and hot water. It was also fun trying the smoothies. all the food was really good and I enjoyed the different smoothies as well. Very fun week!

  14. In this lab, we tried different types of milk such as organic milk,chocolate soy milk, rick milk, and almond milk. Then we ate different foods that has these ingredients and we had to guess what food had what ingredient. I ate many foods that I have never tried such as the cheese fondue and cheddar cheese crackers. This week had some great foods I enjoyed!

  15. I really enjoyed this week's lab. My group made one of my favorite deserts, key lime pie! This recipe was probably the most challenging one we have done to date. One challenge we ran into was that we were running out of cream to put on top of the cake. I also enjoyed the cheese fondue and the different smoothies. I was fascinated by all the different types of alternative milk. The soy milk tasted too fake, whereas I really enjoyed the taste of the coconut milk.

  16. I really enjoyed this week's lab. I learned so much about one product and I loved the experience. Learning how to make the Spanakopita was definitely something I would love to do again in the future! Although I am a little lactose intolerant, I tried everything that the other units made. I was also really surprised with the number of milk alternatives at the beginning of lab. The one I liked the most was the original soymilk because it tasted the most similar to what I drink.

  17. This week's lab was a lot of fun. When I was younger, I was lactose intolerant, so I do not have a lot of experience with cooking with dairy products. However, now that my symptoms have gone away and I'm able to break down lactose again, I'm very interested in learning about ways to cook with milk products. I will definitely be trying some of the recipes that other units made, because everything was delicious!

  18. This weeks lab was based on milk and dairy products. This weeks lab was interesting because I didn't really understand what it meant exactly to be lactose intolerant where your body doesn't have the enzymes to digest lactose, which is why it effects your stomach so badly. My unit made two types of smoothies and chi tea, all of which was really good. I think my favorite was the chocolate brownies with cheesecake chunks in it. It was not too sweet but the perfect amount, better than i expected. I also really enjoyed making the chai tea, because I'm a big tea drinker and love chai and I had no idea how easy it was to make! I tried the other types of milk substitues on our table in the beginning of lab, but wasn't a huge fan of any of those. Luckily I love milk and dairy products so I don't need silk or anything without lactose in it. But it is however a good thing to know about for the future to be able to tell anyone about if they need substitutes or as a dietician.

  19. This week in lab my group made Thai Chicken soup. I was very excited we got to do this because I love Thai spices and flavors. At the beginning of lab I enjoyed tasting the different milk alternatives. My favorite was the chocolate soy milk. I am used to soy milk because I used to be a vegan at one point. I also really enjoyed the coconut milk which was new to me. Another great thing about this lab was that we made spanakopita. I am Greek and love greek food and have even made spanakopita myself before. It turned out to be even better than I expected in lab. Another food that I love is tofu, so I was excited that we got to try a dessert made from tofu. The pumpkin tofu cheesecake was excellent in my opinion. It's great to see that there are so many good desserts made from dairy substitutes.

  20. This was my favorite lab to date! My unit made spanakopita and they were flaky and delicious. My favorite food was the thai soup. I even made it at home on my own. It wasn't as good as it was in lab, but it was definitely worth a try. I enjoyed trying the different types of milk in the beginning of lab. Great lab!

  21. This week my unit had to make greek spanakopita with spinach and feta. They were so yummy and really fun to make! I also loved the smoothies and chia tea that we had. My favorite was the chocolate cheesecake brownies!! It was interesting trying a wide variety of foods that were made make with milk and milk products. I will defiantly try and remake the tai soup at home because I love having soup in the winter!

  22. Loved this lab! I'm always going down to that new creperie place on College Ave. and now I don't need to - because my group made crepes! On top of that groups made different things like ethnic food (indian chai, lassies, thai) and even put a unique spin on holiday favorites such as pumpkin tofu cheesecake! Definitely going to try and make some cheesecake for thanksgiving, and already made crepes twice at home. I can't wait for our next lab!

  23. This week in lab I got to make smoothies and Chai Tea. It was really fun to make something very different than in previous weeks. It was also very interesting to be able to try a bunch of different types of milk. All of them tasted very different from the regular cows milk I am use to. I did like the chocolate soy milk. My favorite items we made this week were the cheddar cheese crackers and the cheese fondue!

  24. I enjoyed this week's lab because I love dairy! I also have recently started liking soy milk so I was excited to try other alternative milk products such as almond milk and rice milk.
    My unit got to make key lime pie which was exciting because I've never made it before. I was hoping we were going to make a meringue on top, which I've never done before, but that's ok!

  25. My favorite thing about this week was all of the different drinks we got to try. It was interesting to taste the various dairy substitutes, which I had never experienced before, and I was also really impressed by the yogurt drink and the chai that my classmates made. I can see myself keeping rice milk in my own fridge and maybe making chai tea for myself. Great job this week, and keep it up!

  26. This week my group and I learned to make an item that I have never even attempted to make....crepes! They were used for our manacotti which turned out delicious! Another group made chai tea which was also very good. Now I can make it at home and fuel my already huge obsession with it! One of the best things that I got to taste this week was the pumpkin cheesecake. The strangest thing about it was that it was made with tofu which I do not even like! But it was so scrumptious and I could not stop eating it!

  27. I actually really enjoyed this weeks lab. I am somebody who likes dairy products, but hates drinking milk so I usually stick to almond milk. I liked having the opportunity to try the different milks, and the chocolate soy milk was something I've never had before and it was great! I really enjoyed the pumpkin cheesecake made out of tofu, you couldn't even tell! I also loved the manicotti, cheese crackers, and all of the different drinks ( especially the chai tea). My group made this week made Thai chicken soup. Everyone said it was pretty good, even though it came out slightly cloudy. We may have let it simmer too much.

  28. This week my unit made the filling for the manicotti and then assembled them using the crepes another unit made. Who knew the whole thing could be so simple, and so delicious! I tried coconut milk for the first time ever at the start of lab and really loved it! I even bought some while grocery shopping this weekend to keep in my room!

  29. The pumpkin cheesecake was seriously so amazing. Everyone at my table was pleasantly surprised that we each got our own little sample! My unit made Spanikopita, which I was familiar with from working at a country club over the summer. I am not a fan of feta cheese so I was not able to enjoy it as much as the others, but I am glad everyone else liked it!

  30. Something that was a wake up call for me was my inability to distinguish between milk and milk alternatives when they were used in baking or cooking methods. Tasting them by themselves in one thing, and they are clearly distinguishable. But when disguised in a recipe, its very compelling to expand your ingredient list to include these milk alternatives. I could have sworn that in the chai latte, a milk alternative was used when it was in fact cows milk. I could have sworn that the pumpkin pie was made with the same dairy ingredients that my mother uses when in fact it was made with TOFU! The art of cooking is truly remarkable in that an incredible amount of creativity and customization is entirely possible without sacrificing the integrity of the food as a whole.

  31. This week my unit made a thai chicken soup with an almond coconut milk. This milk substitute coagulated a little too soon and a little too much forming globs at the surface of our concoction. It still tasted delicious but would probably have had a more smooth outcome if we had used a different milk product. My favorite dish was the pumpkin cheesecake and I was pleasantly surprised that it was made with tofu! I will be sure to try this out the next time I whip up some cheesecake (no pun intended?)

  32. This week my unit made Chai-Indian Spiced Tea, Strawberry-Banana-Mango Soy Smoothie, and Lemon-Banana Lassi. The milk products we used were regular milk, coconut milk, and yogurt. The tea was warm and very thin, the strawberry-banana- mango soy smoothie was a very thick smoothie, and the lemon-banana lassi was the consistency of a thin smoothie. My favorite dish that was served was the key lime pie. It was delicious. I'll be sure to give the recipe a try.

  33. This weeks lab my group made two smoothies (Strawberry Banana Mango, and Lemon Banana Lassi) and Chai Tea. We used a variety of milk products including organic milk, coconut milk, and yogurt. They were all extremely tasty. My favorite things I had tried were the cheesecake brownies and the manicotti made with crepes! I usually don't like manicotti but the crepes were a great alternative to noodles. I sampled all of the different milk alternatives like coconut, soy, chocolate soy and almond. I've always wanted to try a different milk but I didn't want to waste my money on a whole carton if I didn't like it. I'm glad we sampled them because they just weren't for me.

  34. Today we made manicotti. I didn't know that it was just stuffed crepes. They were really simple to make and turned out really well. Most of the foods were really good, even my least favorite was still enjoyable. My favorite item was the cheesecake brownies, and my least favorite was the strawberry smoothie.

  35. This week in my lab my group made tofu pumpkin cheesecake. It was an entirely vegan recipe with the exception of the egg. The overall flavor and texture was remarkably similar to cheesecake made from animal products. Before this lab I had never eaten tofu and now I am willing to eat it in any capacity whether that be in sweet or savory dishes.

  36. This week, my unit made cheesecake brownies and they were delicious! I also really liked the smoothies, I will have to start using soy in my smoothies because it was very good. I also really liked the manicotti and the two different key lime pies. I will definitely try and make the manicotti on my own sometime.

  37. This week's lab was one of my favorites because there was a wide variety of food made by the different units. My favorite food that was made was probably the manicotti because I love italian! I did not really enjoy the different types of milk alternatives. If I were lactose intolerant I would not drink these products instead of milk. However, the chai tea was tasted better than any other kind I have ever had and I will definitely try to make this on my own sometime!

  38. This week's lab proved to be very interesting since I do not like dairy products but I ended up enjoying the food. I especially liked the chocolate soy milk. My group made pastels filled with mannicotti. The dish reminded me of stuffed shells. The key lime pie was my favorite dish. I was not aware how many recipes involve milk. The most important thing I took away from the lab is I like the taste of flavored soy milk.

  39. Coming from someone who doesn't really like milk, I really enjoyed this lab. My unit made rice pudding which was delicious by the way. The other units did a great job as well with their foods/drinks! Loved the key lime pie and chai tea! And who would've thought milk alternatives like almond and chocolate soy milk were good? The crepe manicotti was also surprisingly good!

  40. My favorite milk substitute was the coconut milk. When I think of coconut milk i always think of the stuff that they use to make curry out of. But the milk was a lot more light and less solid. My group made chai tea which was awesome and I will definitely make again since it is so expensive to buy regularly.

  41. Interesting post, I enjoyed to read this article. My favourite recipe is a tea. Every morning I need a tea and I am huge fan of the buffalo's milk. I am also interested to drinking a different types of milk. I think, milk is healthy for our body, so trying different types of milk is a well experience for me. Dairy Market Reports
