Lab # 9 – Fruits and Vegetables

The fruit and vegetable lab was a lot of fun and extremely informative. I have always been a skeptical eater, but trying new foods like spaghetti squash and starfruit opened up more options for making healthy choices with foods that taste great and are nutritious. Learning how different cooking techniques aid or destroy the vegetables will also be useful as I continue to try and manipulate new recipes, because I will be cooking the veggies in order to keep most of the nutrients and flavor in.

There was so much color today in NUTR 119 lab, I loved it!! I was so happy to try the the mediterranean spaghetti squash, and the Baby Ganoush pita chips were my favorite!! Awesome job to group 2!! In today's lab I learned a lot about how to handle herbs and mushrooms. This applies to my cooking habits, because I usually buy mushrooms and I have been washing them the entire time, and most of the time my mushrooms go bad, and they feel greasy. Now I know that I need to clean my mushrooms with a paper towel, and store my herbs in paper towels and a plastic bag. My favorite dessert today was the apricot galette! The crust was the perfect crunchy and doughy mixture that everyone loves. I would say that the apricot galette was gone in 15 seconds from my table. I'm excited to see what next weeks lab brings to the table!

I really enjoyed this lab because it taught me about many fruits and vegetables that I have never heard of, such as the "ugli" fruit. Everything I tried was delicious and would really recommend these recipes to anyone to make at home. My favorite recipe was the carrot cake cupcakes, they were delicious and it's a great way to get your vegetable servings into the diet. Another great thing about this lab is that Chef Kristi gave us some great tips on how to maintin herbs and fruits fresh. I never knew that herbs, such as the parsley shown in class, could really last so long! This is great to know because I love buying fresh herbs instead of dry, and usually my fresh herbs don' last too long because I never know how to store them properly. The best thing about learning these tips is that you can buy organic foods and follow these recommended tips to maintain their freshness, since organic foods usually spoil faster. I hope to keep learning wonderful tips throughout this lab, I really enjoy learning new things everytime.

I really enjoyed the fruit and vegetable lab. I was introduced to some new fruits I hadn't heard of before, such as horned melon and ugly fruit. Our group made the vegetable tempura. I never made or tasted this dish before. I also never fried anything before. This lab gave me some practice with frying and introduced me to another delicious way to eat vegetables. Our dish was tasty, and I also really enjoyed eating the fruit salad and the cupcakes! I hope to keep trying some different fruits and vegetables in the future!

This week my group made the tropical fruit salad and plantain chips. My partners cut up the fruit and I spent most of the time frying the plantains. I thought they were good but they weren't really chips because it was hard to get them thin enough. It was cool to see the starfruit in our salad. I liked a lot of things this week, especially the baba ganoush, tempura sweet potato, and the carrot cupcakes.

This week my group made the potato gratin. I loved it! The assortment of colors in the potatoes also brought excitement to the dish, and the cheese and cream tasted so good. The added pepper made the flavor pop and so much more tasteful. In the beginning of the lab, it was exciting to see the variety of different types of fruits and vegetables. Two of the fruits captured my attention with their lovely smell and beautiful colors on the inside. What I also enjoyed about the lab this week is that everything was healthy and good for you. I love fruits and vegetables and it's cool to see how you can incorporate them in so many different dishes.

This week's lab has been my favorite so far! All the fruits and vegetables were so colorful and pretty. My unit made the apricot galette, and we all really liked it. At first, I was a little apprehensive to try some of the exotic fruits such as starfruit, but I really liked everything this week. The baba ganoush was also one of my favorite dishes this week. Finally, I'm so happy I finally learned how to store fresh herbs properly. I also want to buy them while at the grocery store, but they always spoil before I am able to use them. Now I'll be able to enjoy fresh herbs at home all the time!

I loved this lab! This week, my unit made the Baba Ghanoush which turned out to be delicious. It was really easy to make and is pretty healthy, and the pita chips were fun to make as well. But my favorite item this week was the plantain chips, I loved how they were this nice mix between sweet and salty. I liked learning about the different methods of cooking fruits and vegetables, and the variety of foods that we learned about today. I'm definitely going to try to make the baba ghanoush at home.
ReplyDeleteIn this week’s lab, my unit made the Autumn Potato Gratin. My favorite part about it was the fingerling potatoes. I liked the colors of the potatoes and the little bit of different taste in each of them compared to regular red potatoes. I think the herbs we used brought out a great taste for the sauce we put on the potatoes. Overall I think multiple people in the class enjoyed the potato gratin and I enjoyed it as well. I also enjoyed being able to see very different fruits that normally aren’t spoken about or used. I thought the most interesting one was the passion fruit. The colors were so pretty, but it didn’t look like something I would enjoy eating. I think my favorite meals prepared were the apricot galette, babe ganoush with pita chips, and rosy poached pears. I’ve had apricots before but I’ve never had eggplant. I’ve also had pears before but I’ve never eaten them poached. I thought it was interesting to see the different creations made with fruits and vegetables.

I absolutely loved the fruit and vegetable lab! Over the past couple of years my love for the wide variety of fruits and vegetables available has grown, and I have become more willing and excited about trying new ones. Before this lab, I had never tried papaya or pears even though they are quite common. I also really enjoyed the roasted vegetables and fruit salad, along with the cupcakes our group made! When eating fruits and vegetables, I really enjoy and prefer when there is less cooking done, or when the methods used are simpler to allow the natural flavors to come through. I think this is why I enjoyed the roasted veggies and fruit salad so much. Our group worked together with unit 11 to make the adorable mini carrot cupcakes. Our groups work really well together and it was exciting that we had the chance to make our units regular sized cupcakes since there was enough batter left!

This week was a very colorful and tasty lab! My unit made the Rosy Poached Pears, which were surprisingly simple to make and delicious to eat! I really enjoyed learning about all the different fruits and vegetables that I had never heard before this lab, such as the horned melon, the cactus fruit, and the passion fruit! My favorite dish this week was the baba ganoush and the pita chips. I had never tried baba ganoush before and I never knew that it was made from eggplant. It was absolutely delicious! I would definitely like to try to make that at home.

This week was awesome for me considering I love my fruits and vegetables! My group prepared the oven roasted winter vegetables with the lemon gremolata which was amazing! We had a good amount left over after plating everything that I was able to enjoy before the group tasting. Not only did I really enjoy what my unit prepared, but I also loved the apple crisp as well as the carrot cake cupcakes! I was definitely left wanting more after that bite-sized treat! One thing that I found really cool was being able to try fruits that I have only heard of in the past. For example, I finally got to try what a star fruit tastes like, and I really enjoyed it. I definitely can't wait to make several of this week's recipe's in the future!

This week’s lab was very fun for my group and I. it was the first time either of us made carrot cake with cream cheese ice cream and we were pleasantly surprise how good it was. My favorite dish was baba ganoush which is something I never even hear about before this lab. It was really cool to learn about the different vegetables and some exotic fruits. I defiantly think I will make the carrot cake again at home or sometime in the future. It was really simple to put together and very delicious.
ReplyDeleteThis weeks lab was very interesting. I really enjoyed learning about about various fruits and vegetables that I have never heard of before, seen, or eaten. It was so colorful as well. I am huge into eating fruits and vegetables everyday several times a day. However, this was not my favorite lab food wise. In particular, my unit made the vegetable soup which was very good. I thought the star fruit looked cool, but I didnt think that it tasted very good. The apple crisp was very good as well as the baba ganoush. Eggplant is one of my favorite vegetables, hence why I really enjoyed the baba ganoush. Also, I finally tasted a baby kiwi and a passion fruit and I thought they were delicious! However, I didnt really like the lemon gremolata that was on the roasted vegetables and I didnt feel like you could taste the sauce that the pears were poached in, I thought they just tasted like warm pears. I am really looking forward to next weeks lab and making some of the recipes from this past lab!

Section 2, Unit 10.
Today we did a lab on fruits and vegetables and my unit was assigned to make Mediterranean Spaghetti Squash. I had never heard of this type of vegetable before. It was quite large, a pale yellow color, very hard to cut, and looked and smelled like a pumpkin on the inside. I normally do not like the taste of squash, but after we added sautéed, diced tomatoes, basil, black olives and feta cheese to the strings of squash, it tasted delicious. The thing that surprised me the most is that when we pulled the squash out of the oven, our job was to scrape the contents out of the skin. I thought it was going to be a mushy mess but what I came to find was that the squash came out in thin strings looking like spaghetti! I think it could’ve been cooked a little longer to get a little softer, but the flavor was very good.
ReplyDeleteMy favorite recipes today were the Apricot Galette and the Autumn Potato Gratin. The potatoes were cooked just right but the creamy herb sauce is what made them so tasty! It was perfectly seasoned and was definitely a crowd favorite. I also enjoyed the flavor of the Apricot Galette. It reminded me of a scone with fruit and sugar on it which was a perfect combination. I had never tried an apricot before and I really liked the flavor! The bright orange color also made the dish look very appetizing.
This week introduced me to a lot of fruits and veggies that I never heard of or tried before. What was especially interesting was the methods we used to prepare them. I had never heard of spaghetti squash and originally it sounded like something I wouldn't like, but it ended up being one of my favorite dishes this week. Also, I never had fried plantain chips or apricots before and I actually really liked both of them.

There were so many fruits and vegetables that I had no idea existed! And I never realized how many could be combined to make new fruits and vegetables. My group made rosy poached pears which ended up being really good. I know we've used wine previously to make dishes but I didn't think that it could be used with fuits and I was pleasantly surprised at how good they were.

This week in lab my group made spaghetti squash. It was so tasty! I loved the recipe and will definitely be something I make for myself again (minus the olives). It was such a quick and easy recipe I had no idea! I also LOVED the peach cabeler it was delishous! I enjoyed this lab and left very full when only eating samples of fruits and veggies.

I really enjoyed this week's lab because fruits and vegetables are some of my favorite foods. My group made spaghetti squash. I had never cooked this before, and it was really neat how it looked like a solid, normal squash on the outside, but after cooking, you could actually shred the pulp into spaghetti-like strands. The dish was delicious, and healthier than actual spaghetti! I loved the potato gratin the best. The sauce was simply phenomenal. I also really liked the apple crisp, fried plantains, and tempura. Oh! But how could I forget the carrot cake cupcakes. This was my FAVORITE recipe this week. The cupcakes had a perfect texture and flavor, and the cream cheese icing was impeccable. Great lab this week.

My favorites included, the carrot cake cupcakes that my group made, the spaghetti squash, the apple crisp, and I absolutely ADORED the hummas. It all tasted so good! Additionally, I knew there were a lot of different fruits and vegetables from around the world. For instance, I knew there was a passion fruit, but didn't know what it looked like or smelled like. I also knew what a starfruit was, and have seen one, but haven't ever eaten one. I just really loved lab this week!!!

This week we started out by learning about all kinds of exotic fruits. I love fruits so I figured I'd be all over this. I didn't know any of them!? I guess I eat pretty normal fruits and don't venture as much as I thought. It was neat to see all them and I think I may pick up the ugly fruit next time I'm in the produce section. I'll be sure to watch for exotic fruits in general now. My group cooked a roasted winter veggies mix. Again, I love veggies but not winter veggies! I didn't realize there was such a thing. I mean I knew of squash, carrots, parsnips, etc. I just didn't realize they were categorized into winter. I've also never worked with most of those veggies which was nice to experience but I wouldn't of bought veggies I'd never had before. Good lab! Taught me a lot!

This week's lab was very interesting to me because I'm very picky when it comes to vegetables. This week showed me some great new ways to cook them and I learned that i actually love brussel sprouts! My personal favorites from the lab were the carrot cake cupcakes and oven roasted winter vegetables. I will definitely be making both of these at home. My unit made the fruit salad and fried plantain chips. It was a great alternative to ordinary fruit salad because we used fruits like star fruit and papaya. I absolutely LOVE fruit and to get the opportunity to try star fruit for the first time was really cool. I was also pleasantly surprised with how the plantain chips turned out. It was really nice to get to work with a lot of new foods this week and try some new things. Plus, Chef Kristi taught us how to preserve our herbs and veggies! Looking forward to next week.

I always love switching lab sections because I get to try making a new recipe and be in a new kitchen that I wouldn't normally be in. The lab group I get to work with on Tuesday's is really great, and much more knowledgable than I am about cooking so it is always a pleasure to work with them. Back to the actual food..what can I say, I am OBSESSED with fruits and vegetables!!! I wanted to devour everything we made this week, but the baba ganoush was hands down my favorite recipe. Also, the plantain chips were a pleasant surprise and I actually loved them. I think this lab showed a lot of people that fruits and vegetables are actually really tasty!
ReplyDeleteI am always open to trying new recipes with vegetables and fruits, so I was pleasantly surprised to find that my group was going to be making spaghetti squash. In the end, I did not really enjoy that recipe as much as the others..maybe it is an acquired taste, but I also found it very hard to scoop out the seeds and filling of the squash.
I found it particularly interesting to see all of the different variations/hybrids of some fruits and vegetables that Chef Kristi showed us in the beginning of class. It will be hard to top this nutritious, yet absolutely delicious lab!

I loved the fruits and vegetable lab this week! My unit made the carrot cake cupcakes with cream cheese frosting-to die for!!!! I personally felt like the cream cheese frosting made them. My table even ended up putting some extra frosting we made on the apple crisp dish that another kitchen made. It tastes good on everything. It was so easy to make as well! The carrot cake plain even tasted delicious and was extremely moist.
ReplyDeleteI really enjoyed this lab because you got to see the many different ways that fruits and vegetables are cooked, and the healthy and the not so healthy. Often when I think of fruits and vegetables I either think of grilled or raw veggies and just raw fruit. I always forget you can actually cook fruit as well. The variation that was made in the lab from the tempura vegetables that were obviously fried, to my lab where we made dessert that had a vegetable in it, and then Baba Ganoush, a sauce with eggplant! There is such a variety of foods we create from fruits and vegetables that are delicious while many are also extremely nutritious. I have always been a fan of grilled vegetables, they are so much more flavorful than you would imagine. My favorite dish that we had today was actually between the Baba Ganoush and the Mediterranean Spaghetti Squash. They both tasted so fresh, but so flavorful. I also really enjoy squash and I had never tried it in a sauce like we had today. More dishes to start learning how to make myself!
It was also really cool to see all the many different kinds of fruits and vegetables that I had never seen or heard of before that were all so unique! The one that we got to taste the seeds of that was passed around the room was so flavorful and almost smelled even better!

It was very exciting to learn about the assortments of fruits and vegetables that Chef Kristi showed us in this week’s lab. I learned how to store herbs to prolong their shelf life. I also realize that I have been washing my mushrooms the wrong way as I used to soak them, I will remember to no longer do that.
ReplyDeleteI have been experimenting with the oven in my apartment and have been making roasted vegetables every once in a while, it can be a challenge to time everything to be done at the same time as each ingredient takes different amount of time to be cooked. The one made it lab was tasty and the cooking method really enhanced the natural flavors of the vegetables. The Baba ganoush and pita chips reminds me of the tortillas we had a few weeks ago. The vegetable tempura was really crispy and well done as it was not soggy with oil. The apricot galette tasted delicious and sweet. The apple crisp was something I have never had, what a strange way to mix apples with oats. The tropical fruit salad was very refreshing while the fried plantain chips were a little hard. The autumn potato gratin was a mix of some rather colorful potatoes. The Mediterranean spaghetti squash was also something new to me that I thought there would actually be pasta in there. The rosy poached pears just melted in my mouth and tasted good. My favorite was the carrot cake cupcakes, what a wonderful way to indulge and yet still be healthy. Our unit’s Tuscan vegetable soup was alright but it could use a few more minutes on the stove to really thicken.
It was a rather enjoyable lab and I also learned a lot that I can apply while I cook on my own too.

Today was a lab that I didn't have one favorite or one least favorite. I thought it was very interesting that it was a completely vegetarian day! We did the tempura veggies. They were really good! I just thought it was really interesting mixing the bubbly water with the egg. I'm used to dipping it in flour then the egg wash then bread crumbs is what I do at work. It was a surprising light batter and very crunchy. We ran out of batter by the time we got to the broccoli. So we didn't have a lot of broccoli to give out. If I had to pick a favorite it was the potato gratin. It was very yummy! I've knew about a lot of the veggies we had but never really tired them before today. I thought it was amazing all the different and unique fruits and veggies you told us about today and how crazy looking some were. I thought it was also crazy that putting the pit of an avacado in guac keeps it from turning brown! It was a fun lab this week and I look forward to every week.

In this week's lab, my unit made vegetable tempura with soy-honey dipping sauce. This recipe was very messy, fun, and tasted great! It involved a lot of chopping when it came to the carrots, yams, broccoli, and peppers. Then we had to be patient to wait for the temperature to reach over 300 degrees! However, once we started the actual frying process it was fun dipping the vegetables in the batter. The only thing that I found a little dangerous was transferring the dipped veggies to the scorching hot deep frying pot. We all got a feel of the hot oil because some tiny drops splashed out but nothing to leave a mark. I thought that the apricot galette was the best dish this week! This is because it had a great texture and flavor!

In this week's lab, I had a chance to see a lot of different kinds of fruits and vegetables. From vegetables that Im completely familiar with to the ones that I have never seen before. My unit made carrot cup cakes with cream cheese icing. I personally do like carrots so the lab was definitely fun :). I didn't have hard time working on the lab since the process sent smoothly. Also, I was so happy to find out that there are so many various ways to cook fruits and vegetables.

In this weeks lab I had the opportunity to taste various fruits that I have never even heard of. This was a great experience for me and really expanded my knowledge on the types of fruits that exist out there. I really enjoyed the blood orange and the passion fruit because they had a very sweet citrus flavor to them. The vegetable recipes were all great because they strayed you away from the typical steamed veggie. My favorite was the squash spaghetti which i've never had experienced previous to this lab. Overall this lab changed my outlook on how to eat fruits and vegetables and am excited to try some more fun recipes!
ReplyDeleteI think this was my favorite lab so far! I really enjoyed at the beginning of lab when Chef Kristi showed us all of those crazy fruits and vegetables, and it was even more fun to try them! I think the little kumquats were my favorite. Everyone did a great job on their dishes this week, you can tell that the cooking skills are improving. The spaghetti squash was probably my favorite savory dish, and I loved the Apricot Galette and the Carrot Cupcakes. This lab gave me some great new recipes to add to my arsenal, and I can't wait to try the rest of them on my own.

I think this week's lab was my least favorite lab so far. I didn't enjoy what our unit made. We made the veggie tempura and we really didn't enjoy making it. My unit made the vegetable tempura. We had a tricky time with it. The oil was temperamental and hard to work with, but in the end I think it worked out. I just don't know if I would want to work with that at home. The clean up was messy too.

In fact, I didn't even know they existed. I love trying new things, so that was fun. I was also blown away by the herb trick! That is something I wish I had known for years. I thought this lab was a lot of fun! I love fruits and vegetables, and am always willing to try new things. I had the opportunity to try passion fruit, which I loved. I also have never eaten spaghetti squash before and I am definitely going to make it at home. My favorite dishes were the fruit salad, carrot cake cupcakes, and the vegetable tempura. My unit made the potato gratin. I think it turned out well, but the cream and cheese made the dish very rich in my opinion. And for this reason, I prefer roasted or mashed potatoes. It was interesting to see all the different/cool looking fruits and vegetables like a blood orange, purple potato, and a horned fruit. I didn’t realize that fruits and vegetables could be prepared in so many ways! For example, you can sauté, steam, grill, bake, broil, stew, poach, braise, fry, etc. Also, it was beneficial to find out different cooking tips for fruits and vegetables and tips when buying produce. Lastly, I’m really glad Chef Kristi shared her tip on how to keep herbs fresh longer because I always end up throwing out my basil and parsley since I don’t go through it that fast. By wrapping the herbs in a dry paper towel and sealed tight in a plastic bag while in the refrigerator, the herbs are not soaking in any additional moisture and the parsley she showed us from a month ago looked new.

I was really looking forward to lab this week for the sole reason that I love fruits and vegetables. They're something that, when prepared correctly, are absolutely delicious and can be used as a snack or part of a meal (or in some cases and entire meal. My unit (along with unit 12) made the carrot cake cupcakes with cream cheese frosting this week. This was my first time trying carrot cake, and being able to actually see the carrots made me a little bit iffy about them at first. However, after I took a bite there was no turning back. The cupcakes were delicious, and I'm really excited to make them at my apartment at some point.
ReplyDeleteMy favorite dishes, other than my units, would definitely have to be the apple crisp and spaghetti squash. I have a huge sweet tooth, and the apple crisp was just delicious, and something that I know my friends and family would really like. The spaghetti squash was something very different for me. I'm a huge fan of "The Biggest Loser", and one of the contestants this year had mentioned spaghetti squash and how much he loved it. At that point in time, I was really intrigued by how it would taste and the overall recipe of this dish, so I'm really glad that one of the units made it this week. It was so good, and my roommates and I really want to make it for dinner at some point.
Fruits and vegetables are foods that I feel can be eaten at any point of the day, they're just that good. I'm so happy to be able to use some of the recipes that we had in class this week in the future.

People are finally getting tired of and understanding that animal fat is not the only way to produce flavor and richness in a dish and are resorting to produce for texture, color, and flavor-Instead of making a dish with the spotlight on a cut of meat, vegetables are slowly becoming the center of the plate.

Carrots, a vegetable historically regarded as a savory ingredient, was used to create a cupcake. Many other mild vegetables are being made into desserts these days-such as cucumbers, squash, and various melons. I enjoyed this lab a lot.

I heard a bunch from Chef that I have never heard before in the beginning of class that I thought had very strange but interesting names. I also enjoyed trying the passion fruit. My unit this week made baba ganosh and pita chips. I didnt know pita chips were just that easy to make and they turned out really great. I also LOVED the baba ganosh which I never had before. I love eggplant so the dish this week was definitely up to par for me. Some of my favorites this week also included the carrot cupcakes and the fruit salad

I was really excited to do a lab on fruits and vegetables because they are two of my favorite types of food. I thought it was really interesting when we got to see all of the interesting types of fruits and vegetables on the counter before we started to cook. Our kitchen made baba ganoush which I have never made before. It was fun to roast the eggplant and then scoop it out. My favorite dish was the fruit salad, because I love fresh, ripe fruit. I really enjoyed this lab.

This week our lab made a Tuscan vegetable soup that consisted of a variety of dices vegetables, spices, and spinach. It was interesting the order we added the vegetables in due to how fast particular ones would soften faster or needed extra time (carrots onions, and celery) to soften. It was a simple recipe and tasted delicious. I found it very interesting in the beginning of class when Chef Kristi went over all different types of exotic fruits I have never heard of or even seen. Everything tasted great and it was even better that it was all healthy for you-my favorites were the fried plantain chips, vegetable tempura, baby ganoush, and the carrot cake cupcakes.

This was my favorite lab so far! My unit worked with unit 12 to make carrot cake cupcakes with cream cheese frosting, which is one my all time favorite desserts! I really enjoyed making these cupcakes completely from scratch because I felt like they were healthier than most carrot cakes I've had. I also really enjoyed getting to try all the unique fruits Chef Kristi presented to us, I really liked the kumquats. Overall, I think my favorite dish from this week was either the carrot cake cupcakes or the apricot galette, or the baba ganoush! I liked so many of the dishes this week!

Fruits and vegetables are so important to our diets and I was excited about this lab and the different recipes that would be made. My unit made roasted winter root vegetables with lemon grenata. Winter vegetables were appropriate, as it was snowing on Monday. I loved how easy this recipe was. To medium dice root vegs and roast them in the oven for a period of time should be able to factor in to many people's meals. For ease of prep and cooking, this recipe yields a lot of health benefits. I will continue to use what I learned to cook vegs for myself so I can implement more into my daily intake. All of the food was tasty this week, and I also liked to the vegetable soup very much! ReplyDeleteIn this weeks lab, it was most difficult one for my group. We made vegetable tempura. It was difficult because we had to get all the vegetables in the batter and fried in a matter of seconds. We thought our batter was really thin and kept leaving bits behind in the oil. Oddly enough, it turned out tasting good and I enjoyed it. Fruits and vegetables are very important in our diet. My favorite food was probably the carrot cupcakes. I love the icing on them even though it is probably the most unhealthy thing in lab. But I had fun and learned a lot about how many different kinds of fruits and vegetables there are in the world!

This week my group made the spaghetti squash, something I have only every tried to make once before and completely failed at. It was a lot of work to scrap out the seeds and pulp, but it was so interesting how, if done correctly, the squash can really look like spaghetti. I can't say that I was a huge fan of our dish, however, it was infinitely better then the first time I tried making it. I LOVED the tropical fruit salad, and can not wait to make it at home. This lab made me super excited for the farmers markey to start back up downtown so I can get really great produce every week!

It was very easy to make but I didn't realize how many ingredients were needed for it. I also liked how we had to make our own icing. The carrot cake was definitely my favorite dish. Overall, I didn't really like most of the dishes this week, but I did enjoy learning about exotic fruits in the beginning of class!

This week my group made the Apricot Galette. I really enjoyed making this and would have never thought it was that simple before making it in class. This was by far my favorite lab yet! I absolutely love fruits and vegetables, and was so excited to hear, taste and see so many new fruits and veggies! I was a neat experience to taste passion fruit for the first time, and I was quite intrigued to learn that there is a fruit called "ugly fruit." I am so happy to have learned Chef Kristi's trick to keeping herbs fresh, I will definitely pass that on to my family members at home, as we are always throwing away remaining herbs after cooking. This week my group made Mediterranean Spaghetti Squash, which I tried for the first time as well! It was delicious!

This weeks lab was my favorite so far, because I love fruits and vegetables! My group made apricot gallete, something I have never had before. It is a French dish and when we were finished it not only tasted delicious but was very pretty. Along with the gallette, another of my favorite dishes was the spaghetti squash.
ReplyDeleteThis week's lab was so good! My unit and until 12made carrot cake cupcakes! We thought they were amazing and I think the other units did too. We had some difficulties because we used the wrong type of sugar. Luckily we were able to figure out that issue and redo the icing. I really enjoyed the pears that were prepared. They were by far my favorite. This lab was probably my favorite because fruits and vegetables are my favorite. There is so many ways to eat and prepare fruits and veggies. I listened to Chef and went out and bought some odd fruits that I don't usually eat or buy and in fact I have never heard of them. I bought sugar apples and rambutan. I highly enjoyed both.

This week's lab was probably top 3 for favorites since I cook a LOT with both fruits & veggies. The introduction to this lab from Chef Kristi was neat since I learned about fruits I hadn't even heard of; i.e. horned-melon and the "Ugly Fruit". My unit made baba ghanoush which is something I am familiar with since we make items like dolma and hummus from scratch often. Little fun fact, "baba ghanoush" literally means spoiled father in Arabic. The end of lab was cool trying such an array of dishes, I got to taste my favorite fruits fresh and in baked items as well as some tempura.

This lab was extremely interesting to me. I always considered myself pretty knowledgeable in fruits and vegetables; however I found out that I still have a ton to learn. I had known about spaghetti squash and star fruit but there were so many others that I had never even heard of, let alone have I seen- such as the horned melon, the ugly fruit, the cactus fruit and I had never seen a passion fruit. This lab opened my eyes that to anyone who believes they don't like fruits and/or vegetables, they must not be aware of the hundreds of options they have! My favorite dish was baba ganoush and pita chips, which I'm really happy about because I used to think I hated baba Ganoush but now that I tried it again I love it!

I actually did not know that there was such a large variety of fruits and vegetables. A lot of the ones mentioned I did not know existed. I thought the spiked melon was very interesting. It was interesting to learn that even fruits have defense mechanisms. My group made the Rosy Poached Pears. This was a really unique recipe. It was really simple to make too and it tasted amazing!

I was really surprised when I found out that almost all of the fruits and vegetables introduced to me could be found at a store like Wegmans. Next time I find myself out shopping, I think I’ll take some chances experimenting with some of the ingredients used in this week’s lab. They really made for some flavorful and beautiful looking dishes.

Last week's lab was so much fun and everything tasted delicious! I was impressed with all of the fresh tropical and novelty fruits that Chef Kristi brought in. It is winter in Pennsylvania after all! I also really enjoyed the tip she gave us about storing herbs in a ziploc bag wrapped in a paper towel to keep them fresh. I couldn't believe it when she said the herbs she showed us in class were more than a week old. My favorite dish of the day was definitely the carrot cake. I liked the carrot cake so much I went home and printed out the recipe so I could make it at home.

This past weeks lab had to be one of my favorites. All of the dishes made were both healthy (with the exception of my units) and tasted great! I especially enjoyed trying the passionfruit at the begining of class, I have never had passionfruit before but its texture and seeds reminded me a Pomegranate but smelled much more tropical. If i ever find a place in the world that smelled like the inside of a passionfruit then you better believe thats where I would live at. What I liked about my units recipe for the day was that it was something I had never done before. When I think of eating vegetables the last way that I would prepare them was by coating them in a batter and deepfrying them. But, nevertheless, we did and the soy sauce that accompanied the deepfried veggies was fantastic
ReplyDeleteI really enjoyed trying all of the unique fruits that were available during this lab- and they all tasted pretty good, even the ugly fruit! My lab had the joy of making apple crisp, which was pretty good but I think we may have overcooked it slightly even though we took it out ten minutes before the recommended time. Oddly enough, it was starting to char around the edges after only 20 minutes in the oven... would have been fantastic with some vanilla frozen yogurt!

I found this lab to be really interesting and fun because I was able to try many fruits and vegetables that I had never had before. My group was assigned to do the fruit salad and at first I thought it would be a regular fruit salad but there were two fruits we had to prepare that I had never tried: Starfruit and Papaya. Both were very good and not to hard to prepare. I think I will definitely purchase them again. I also had eggplant for the first time. My favorite dish was probably the spaghetti squash and I will probably try making it in the near future.

I went into this weeks lab thinking okay, well were working with fruit so well probably make alot of fruit salads and in reality it was nothing like that. I really enjoyed the Fruits and Vegetables lab because I got to learn about proper cooking methods and about different types of fruits and vegetables. There were defiantly some items that were knew to me, such as the different types of potatoes used in the autumn potato gratin, and the star fruit and papaya in the fruit salad. This lab had a lot of good foods that I will be sharing with my family. I really enjoyed the Potato Gratin, Fried Plantain chips. The one dish that really intrigued me was the Tempura of vegetables such as broccoli, I really don't enjoy eating broccoli because of how it taste but the way it was done in this dish made me rethink how I feel about broccoli, if I could get my mom to fry it I would defiantly eat it a lot more.

My group made the oven roasted winter vegetables with lemon gremolata. Though it was not a difficult dish to cook, it took a lot of time and concentration to have nice and even cuts on all the vegetables. I love fruit so naturally my favorite tasting dish was the tropical fruit salad. I especially enjoyed this dish because by adding star fruit and papaya it made it not the average fruit salad. This lab also opened my eyes to many varieties of fruit that I have never tried or even heard of. Learning of such foods has inspired me to try to fruits and vegetables and to experiment with them in making my own dishes. I never knew kumquats were so delicious! How to keep herbs fresh was another useful tip I took away from this week's lab and I will be sure to see if I have the same success as Chef Kristi.

I was really looking forward to this week’s lab because I absolutely love fruit and vegetables and was excited to see what new recipes I could steal for myself. My group and I prepared the Mediterranean Spaghetti Squash and ended being my favorite out of all the recipes made. It tasted really good hot, but once it got to the other groups to taste it had cooled down and wasn’t as good as it was warmed up which may explain why the other groups didn’t care for it and had left overs. I was really hesitant on trying it, but ended up loving it and plan on making it myself one night. One thing I will change with the recipe is adding chicken into it and some kind of dressing, maybe balsamic vinaigrette. My other favorite dish was the warm apple crisp, but adding some vanilla ice cream with it to pull it all together.

I was excited about this week's lab because I really love trying different types and recipes for fruits and vegetables. I was really happy to see that one of the groups was making spaghetti squash, because it is one of my favorite veggies! It's a perfect substitute for real spaghetti, with no carbs and less calories. My group made potatoes au gratin. The dish was delicious, although it was not the healthiest side option! Trying the passion fruit was also a highlight of the lab, since that is a fruit I have never seen or tasted before. My favorite food of the day was probably the carrot cake cupcakes. This was definitely my favorite lab! Fruit is probably my favorite food in the whole world and I loved getting to try new and different kinds. I really liked the passion fruit. The "ugly" fruit was very interesting, too! I told my non-nutrition friends about it after lab. It was interesting to learn about the different tips for keeping produce fresh, such as keeping the pit of the avocado in guacamole and using the paper towels for the herbs. I had no idea how long fresh herbs could last. I enjoyed making the Tuscan vegetable soup with my group. All of the vegetables tasted wonderful in it. I really liked the fruit salad with the kiwi and mango. The apple crisp was delicious and I liked the spaghetti squash. My favorite dish was the poached pears in the wine; it was so sweet and tart and the texture was perfect. I definitely want to explore the world of exotic fruits and vegetables and learn how to use all the different preparation methods!

This lab was a very exciting one for me because I really enjoy fruits and vegetables. I enjoyed learning about all the fruits and vegetables that I didn't even know exisited and all the recipies that they could be used in. My unit made the carrot cake cupcakes. They turned out awesome. I wasn't sure how I was going to like the ginger in it because I'm not fond of ginger, but you could barely even tell it was in there.

I liked this lab for several reasons. I liked the food we ate. I liked it because it was all vegetarian, so I could eat all of it. It was also very colorful. The variety of colors of fruits and vegetables make the food more fun to eat.

I learned about so many different fruits and vegetables in this lab. I'd never heard of the horned melon, or the ugly fruit before and it was so cool to see how all these strange fruits exist! I've had passion fruit flavors before, but have never tasted a real passion fruit and it was really cool to see how it smelled and it's strange seed texture which I really liked. Learning about Chef Kristi's method of keeping herbs fresh in the fridge was so helpful--I rarely buy fresh herbs out of fear they'll go bad before I have time to use them, but now I don't have to worry! I passed the tip along to my sister and mom too!

This was one of my favorite labs because a huge component of my diet is all fruits and vegetables - so learning new recipes that involves the use of different fruits and vegetables was great! My group made the apple crisp. I thought that it turned out really good and would be something I would definitely make again. One thing that I tried at the end was the poaches pears (which I have never tried before), and I ended up really enjoying them. It was also really interesting to learn about some of the exotic fruits and vegetables that we are not normally exposed to. Also, I learned Chef Kristi's trick of wrapping fresh herbs in a papertowel in order to expand their lifespan. I am now more inclined to buy fresh herbs and use them in my cooking.

Our group made the Autumn Potato Gratin, which was delicious! I also enjoyed the Baba Ganoush and Pita Chips, Apple Crisp, Fried Plantain Chips, and the Carrot Cake Cupcakes. I never knew you could use fruits and vegetables for so many different types of recipes. I will definitely try to make some of these on my own time!

ReplyDeleteThis was a great lab. I got to try several new things. I never really thought about how many different types of fruits and vegetables there are. I have become more interested! My group made rosy poached pears. The recipe was simple, and included my favorite kind of wine- pinot noir. The reduction sauce was crazy. Once we took it off the heat it became thick, and got thicker as we poured it over the pears and it sat waiting for service. Overall it was good, but not really my kind of food.

I really liked this lab. It was actually one of my favorites because I love fruits and vegetables. Im glad that now I have recipes that have my favorite foods in. The two recipes that I liked the most were the apple crisp and the carrot cake cupcakes. I am biased with the cupcakes because my group made them, but they tasted really good. And the cream cheese frosting was amazing. The apple crisp was delicious, too. Anything that is a dessert will always be delicious for me, but these two foods were the best from this lab. Overall, this lab was one of the best and I hope every lab continues to get better each week.

The Fruit and vegetable lab was the most interesting lab to me so far because of the variety of produce and vegetables we get to work with. I have never tried brussel sprouts until this lab and I found it quit delicious. I always thought brussel sprouts would taste like cabbage because that's what they looked like. Another comment I would like to make is regarding the passion fruit. A lot of people would have passion fruit flavored drinks but never have the actually fruit before. After trying the passion fruit I do have to say passion fruit drinks are much better then the actually fruit. I wish that besides Wegmans, other grocery stores like Giant or Weiss would carry a better variety of fruits. I usually never shop at Wegmans because it does not fit my budget.

I do not think I have ever been so confused or surprised as I was when I saw a Plantain. I thought it was a banana- both the outside and inside both look exactly like a banana, however the taste is very different. I wanted to peel the plantain as you peel a banana, however, there is a special technique to properly removing the peel of a plantain. Deep frying them was actually really fun because you could watch the plantain turn shades darker and become crispy. They actually tasted really good and a lot like french fries. It was weird, yet fascinating to have something that looked like a banana taste like a fried potato. This is defiantly a lab I am going to remember well.

The beginning of lab last week was very interesting. Who knew that there were so many types of exotic fruits/vegetables that we don't consume on a regular basis. The horned mango was pretty cool and made me wonder what it would taste like. The passionfruit smelled good once you actually put your nose up to it but smelled kind of foul from further away. I wasn't really up for trying it but apparently I missed out.
ReplyDeleteThe vegetable we had to use was carrots and my unit made carrot cake cupcakes. It's amazing how you can make something so delectable from a vegetable (granted there was a decent amount of sugar as well). I also enjoyed many of the other dishes such as the Baba Ganoush, Autumn Potato Gratin, Mediterranean Spaghetti Squash, and Rosy Poached Pears. Surprisingly, I thoroughly enjoyed the spaghetti squash and like how it has many health benefits. It wasn't as bad as I thought it would be. The Baba Ganoush was delicious also even though I usually don't enjoy foods with such a smooth texture. Overall, I'm glad I learned about the different ways you can incorporate fruits and vegetables into dishes and look forward to making a dish in the future.

I was so excited when I saw the different fruits and vegetables displayed in front of us. I really like the ugly fruit. As the named called, it looks ugly. However, it tastes very good. It tastes like orange, but it’s sweeter. Even though people buy organic food has a lot of advantages (good for health, save energy, protect environment), most of people cannot afford the costs of buying organic food.

The lab of fruits and vegetables is the most interesting lab so far for me!It is so amazing that we can cook fruits and vegetables in so many unbelivable ways!And I've never thought of we can having fruits more tasty while keeping their oringinal flavor. Chef Kristi introduced so many fruits and vegetables that I have never seen before such as ugly fruit, cactus fruit and yucca root. I love the smell of passionfruit, it is very exotic and fresh. Among our various recipes, it is no doubt to say that I love them all!Every recipe of this week is so delicious that I just want to try them all.Especially the vegetable tempura and fried plantain chips,they were so delicous. I think the frying created different texture for the fruits but didn't influence their fresh flavor at all. They must be the healthiest delicous snack that I have ever tried. What's more, our group was responsible for the rosy poached pears this time. We poached the pears well but however lastly we cooked the poaching liquid to become so sticky and even become tough after short time cooling.It somehow reduced the texture of the soft pears, I hope I can prevent this problem next time when I make it at home!

I really liked this past week’s lab. My group made the Vegetable Tempura. I have only ever heard of this, never saw nor tasted it before. I have also never fried veggies; I thought this was very interesting and different approach that I had fun with. I really liked the broccoli in this, and thought the sauce really complemented it well. My favorites were the Baba Ganoush and Pita Chips, the Apricot Galette, and the Autumn Potato Gratin (which was seasoned perfectly and I thought was probably the best). The carrot cake cupcakes were also a good dessert, and probably my favorite cake and icing combination. It’s nice to see how everyone has improved with their techniques, and I’m excited how the rest of these labs will turn out.

In this weeks lab, we made the apple crips in my group. I've never tasted one before, so it was a new desert I tried which I loved. I also had the chance to taste the apricot galette. I really enjoyed the carrot cake cupcakes, and I'm definitely making them for Easter.

Honestly, I did not like what our group made for the last lab which was winter vegetables with lemon gramolata. It was not bad but I thought only veges with little sauce tasted too plain. However, I liked what other people made. I loved that I could enjoy healthy foods with great flavors.

I liked this lab because I love fresh fruits and vegetables. My unit made fruit salad and fried plantains. I have had friend plantains before in the Dominican Republic and love them. The ones we made were definitely not as good as the ones I had in the DR but they were still good. I liked looking at all the different kinds of fruit. The passion fruit was really good and smelled awesome! I am excited for next weeks lab because we are making bread and I tried the bread from classes last year and it was awesome.

Being concerned with health and well being means I have a love of fruits and vegetables. While I love vegetables I find that I end up making the same thing over and over. I don't experiment enough with making new dishes. This lab opened my eyes to all the different ways vegetables and fruits can be used. My unit made carrot cake cupcakes and this is a perfect example of using vegetables in a creative way. While carrot cake is a classic, there can be more ways to incorporate vegetables into desserts.

This lab was a lot of fun! We learned about and were able to try different types of fruits. Some fruits were the ugly fruit, blood orange, and komato. Besides learning about new fruits, the dishes made in the lab were great. They tasted really good and also showed different ways of cooking fruits and vegetables. My favorite dish had to be the carrot cake. It has always been a favorite of mine, so I was a little bias. One thing that did catch my attention was the yucca. In my home, my mom cooks yucca. There are many ways in which you could cook it, but I really enjoy when it's made into bread. After lab I spoke to my parents, and they said the natives did in fact chew the yucca in order for it to ferment and it would make a drink named "chicha". They said it would be served to guests that are visiting one's home especially.

Last week's lab on fruits was so fun, I loved trying all the new fruits that I had never seen or tasted before. I loved the blood orange. The ugly fruit looked so funny to me and I was surprised at how thick the skin was! I had two favorite dishes this week- the carrot cake cupcake (the icing was amazing!) and the apple crisp. I love fruits & veggies and I love baking so I am always on the lookout for a good recipe- I definitely will be baking those carrot cake cupcakes for Easter! My unit made spaghetti squash. This recipe was delicious and the toppings brought great flavor to the recipe, I especially loved the olives and feta cheese. The only hard part about this recipe was cutting the squash, it required a lot of woman power!
