Week 6: Fruits and Vegetables

From the monochrome of the Starches Lab we move into living color this week and explore several different aspects of vegetables and fruits! We had a quite a variety of dishes this week, using potatoes, carrots, apples, pears, and bananas, among some others. Chef Kristi showed us some clever ways to keep herbs fresh in our refrigerator or freezer so that they can last a long time. She also showed us some interesting produce that we had never seen before. What’s a rutabaga anyway? We enjoyed some healthy fruits and veggies this week, next week we will be back to learn all about characteristics of fats and oils! Your comments look great!   1. Today we cooked a bunch of vegetables and fruits. My favorite of the vegetable was the squash soup and my favorite of the fruits was the apple crisp. I did not like the warm potato salad or the star fruit in the fruit salad. I really enjoyed this lab because there was a ton of different fruit and vegetable recipes that I would like to try at home!

  2. Today's lesson was really interesting. There were so many different fruits and vegetables that we were shown and actually used that I'd never even heard of before let alone seen in person. It's amazing that some of them look so similar but taste so different from each other. The squash soup would definitely be my favorite of the vegetables and I really enjoyed the applesauce too. I can't wait to make them again!

  3. In the beginning of todays lab it was really interesting to see all the different types of fruits and vegetables there are. So many of them I had no idea what they looked like even though I heard of them before, and there were a few types I had never heard of or tried. When it came time to try all of the recipes I was surprised that I like the brussels sprouts but did not like the sweat potatoes. The brussels sprouts seemed a little dry but I enjoyed the flavor. I really did not enjoy the kale. The kale salad had too much vinegar and I did not like the texture. When I tried the fruit salad I decided to pick out fruits I had never really had. I tried the pomegranate seeds and I am still not sure how I feel about them. I felt like they weren't as sweet as I would have expected and was bothered by how difficult to chew the seeds were.

  4. Cassandra Raugh - Section 002.

    Today showed me how little I was unable to identify the "unpopular" fruits. For sure, the fruit and vegetable presentation was my favorite because it taught me something that I can use at work when counseling people on foods. Plus, it's always fun to talk about foods that are different and aren't necessarily heard about everyday like Asian Pears and Starfruit. By the way, I have never even heard of an Asian Pear and now actually want to go to Wegman's and try one. My group roasted brussel sprouts today too and boy were they tasty. Also, another food that I haven't had before. I think more and more each week I'm learning how much my traveling, on to go, protein bar diet is hindering me from expanding my horizon with different foods. After this last and final semester I plan to start re-making some of these recipes and sharpening my skills in the kitchen.

  5. Today's lab was one of my favorites so far. There were so many delicious recipes I thought they were all great! My group baked sweet potatoes and made a dipping sauce. I was a little unsure of how the sauce was going to taste because the smell of it wasn't very appetizing. In the end it turned out great and the sauce was really good with the sweet potatoes. This is definitely something I am going to want to make again!

  6. Hands down my favorite lab yet. Not only did I learn to make my favorite recipes (Butternut Squash/Apple soup and Apple Crisp), but the Professor was nice enough to alter the recipes so those of us with serious nut allergies were able to enjoy every recipe made. Today was a lot of fun, yet educational too as I learned from a fellow classmate the best cutting technique for butternut squash, and realized there is a way to actually enjoy brussel sprouts and other healthy foods. I'll definitely be paying the online recipes a visit more than once!

  7. I'm not a big fan of fresh fruits and vegetables so I don't normally eat them often, but after today's lab I realized how easy it is to include them in recipes. Plus they don't taste that bad! Two of my favorites were the butternut squash/apple soup, and the brussel sprouts. I enjoyed this lab because I got to try new foods that I probably never would have ordered at a restaurant, or even thought about making in my own kitchen. It was also interesting to see all the different types of fruits and vegetables that aren't so common in the normal grocery store.

  8. Today's lab was very enjoyable. I am a big fan of fresh fruits and vegetables. I was fascinated by all the different types of exotic fruits and vegetables that I had never heard of before. My group made apple crisp. It was a very simple recipe that I could easily make at home. The only problem was that the brown sugar did not caramelize all the way on the top of the crisp. We were not sure as to why this happened. I really enjoyed other students dishes such as the butternut squash soup, brussel sprouts, and the sweet potatoes. This lab opened my horizons to different types of food that I will eat again in the future!

  9. I thought today's lab was one of the more fun labs we've done so far. Though we were missing a team member, my team member and I were able to complete the task in a timely manner unlike last week. We were very proud of the results of our hard work. I enjoyed the other units' dishes as well, though I didn't like the vegetable dishes as much. There were some dishes that were too salty and drew away from the actual ingredients but overall, everyone did a great job with their assignment! :)

  10. This week's lab was a lot of fun. I cook a lot at home and being a vegetarian, I considered myself fairly familiar with fruits and vegetables, but the demonstration at the beginning of class proved me wrong - I did recognize a lot, but there were a few things I've never heard of (like some of the South American root vegetables), and some things I've heard of and never seen (like quince). My group made the apple crisp, which was so easy! Our end of the kitchen smelled so good the whole time we were cooking - the groups around us were making apple sauce and the pears in the wine reduction. Everything was really delicious today - my favorites were the butternut squash soup and the kale salad. Thank you for putting the recipes on Angel - I can't wait to make them for myself!

  11. I really enjoyed this week's lab. One of my team members was missing so it did take longer to prepare all of the vegetables to get them ready, and the TA's very kindly helped us finish so we could taste the rest of the dishes. My group made butternut squash and apple soup. I was worried at first about how those two flavors would go together, but the apples did not have a strong taste in the end result. They sweetened the soup perfectly, though. I enjoyed tasting every dish this week and it was fun to see how vegetables and fruits can be used together in different ways to make healthy dishes as well as dessert dishes.

  12. I loved having the display presented to us before the lab...I never knew there were so many types of potatoes (or, tubers)!! It was fun to learn about some new varieties of fruits too. As usual, all of the food turned out well. I'm excited to try roasting my own brussels sprouts soon, however without the bacon. :) Still a good recipe though!

  13. This weeks lab was so tasty! I loved learning easy ways to make fruits and vegetables at home and the recipes we tried really got me in the mood for fall. I loved the butternut squash/apple soup and the rosey poached pears, and especially the apple recipes and the cheesecake! I plan on making the pears and apple crisp for thanksgiving this year!

  14. There was so much delicious recipes in todays lab. My unit made the sweet potato slices with dipping sauce and it just so happen to be my favorite. I have to say the apple crisp and apple sauce were my favorite out of all the apple recipes. I learned about so many fruits and vegetables that I never even heard of which was very interesting. Everything tasted great and can't wait to make them on my own as the year goes on!

  15. Lab today was "sweet"! My unit made the most delicious Apple Crisps that by far was one of my favorite. I also loved the Warm Potato Salad and the Sweet Potato Chips with the dipping sauce. I have never tasted Kale but after tasting the salad that was made with it, I might just starting eating more Kale! Not to sound cheesy but I really do like fruits and vegetables! Great lab!

  16. I loved exploring different fruits and veggies in this weeks lab! The introduction to class when Chef showed us different kinds of produce reaffirmed that there are an infinite amount of possibilities when it comes to eating them. I always love finding new recipes for fruits and vegetables; I especially liked the kale salad (which my group made). It was really easy, the kale was tender and didn't even require cooking! I also loved the warm apple sauce since it was sweet and spiced. Great lab!

I really enjoyed this week's lab...i always love coming to class and getting to eat! this week was especially fun since my group got to make one of my favorite things, CUPCAKES! the carrot cake cupcake recipe used fresh ginger in the cake batter and icing, which was a nice touch. I really enjoyed the apple crisp and the butternut squash/apple soup too. i like pretty much all kinds of fruits and vegetables, but i didn't really like the kale salad, i think the vinaigrette was a little off balance. too much vinegar for my taste, maybe. all in all though, i love that every group gets to try new recipes and we all get to eat at the end!

  18. This weeks lab was a lot of fun because I got to try a lot of fruits that I have never had before and I really liked them. I always see things like passion fruit and pomegranate on tv and they looks so good and I finally got to try them and they are!

  19. This week's lab was great. I actually enjoyed all the vegetables served and to my own surprise, I liked kale and Brussels sprouts more than I thought I would. It was a good opportunity to be exposed to the different types of vegetables and fruits which are uncommon or some which I would not have tried myself. As usual, I always look forward to the tastings. The recipes which we get from class are not difficult or time consuming at all and I would definitely try some out at home.

  20. This lab was a lot of fun. I thought the display of all the different kinds of fruits and vegetables was awesome. I never knew what an Asian pear was, and after Chef described what it was, I want to try one! There were a ton of others I never heard of before, but I definitely want to. Our group made the caramel, chocolate and strawberry sauces for the cheesecake- I'm usually not a fan of caramel but it turned out really good. I really enjoyed the rosy pears. So good! I love pears and this is a really cool, fancy way to make them. I also enjoyed the mini carrot cake cupcakes- usually not a fan of that either but really delicious. All around great week in lab!

  21. This week's lab was so interesting because I discovered there are numerous fruits and vegetables that I have yet to try. For example, I had never tried okra or parsnips before. I am now more eager to try new fruits and vegetables. I also thought that everything everyone made was really good! My group's dish (roasted sweet potatoes with dipping sauce) was one of my favorites. I can't wait to to make that sauce at home because it was delicious!

  22. I love this week's lab, it is all about fruits and vegetable, which it is my favor part of meal. In today's lab I discover many fruits and vegetable that i have never hear before. my favor dish of the day is cheese cake and apple squash soup.

I think that fruits and vegetables are the first thing that the general public associates with good nutrition, and it was fun to understand the variety of cooking methods that they lend themselves to. I hope to someday help my clients embrace a diet rich in fruits and vegetables, and learning about their diversity in cooking in this lab inspired me to help people get more of these foods in their diets.

  24. This week our group worked with the Fruit salad and Bananas Foster, both which turned out great. We weren't sure how to make the fruit salad look good at first, and we didn't want to just throw it all into a bowl, so we took some time moving the fruit around until we came up with a pretty good design which everyone in the class we showed it to ended up liking. It was really fun!

  25. This week's lab was definitely the best yet. I love fruits and vegetables so it was nice to have a week devoted to them.
    I know a lot of people who don't like cooked fruit, and I could never understand that, especially after this week's lab.
    Our group made the rosy pears, which were delicious. I am not sure if I would make them again any time soon, but I can see myself making them for a dinner party or having people over when I'm older.
    My favorite recipe was the butternut squash soup recipe, and I especially liked the kick of spice in it.
    Overall great lab, and I am looking forward to what we do this week.

  26. The fruits and vegetables lab was definitely a great way to learn how to incorporate fruits and vegetables in every meal in any way. My unit made the warm potato salad which I surprisingly liked a lot. My favorite thing was the apple crisp and I can't wait to be able to make it when I get a kitchen next year. I also thought it was interesting that you shouldn't wash berries because it makes them deteriorate faster.

  27. I am a huge fan of fruits and vegetables, so this week's lab was perfect for me. It was interesting to learn about the different preparation methods, and I was introduced to some new foods. My unit made the carrot cake cupcakes, which were absolutely delicious. I've always wanted to know how to make them from scratch, and now I do! I will definitely be making them again.

  28. This week's lab was definitely my favorite! I'm a huge fruit and veggie eater and I learned so many new recipes to try out! My group made the raspberry cooked pears and I would have to say that it was my least favorite dish. The syrup turned extremely hard and sticky immediately after it was drizzled on the pears. It stuck to my teeth and was so difficult to clean off the plates. My favorite dishes were the fruit salad because I absolutely loved the pomegranate seeds in it and the squash soup! The different sauces for the cheesecake were also delicious...but then again who doesn't like chessecake covered in chocolate ;) The labs just keep getting better!

  31. I was so interested to see and hear about so many fruits and vegetables I had no idea existed. I was also to learn such quick and easy ways to cook kale that are so delicious! The bruised kale salad is such an easy side that I prepare in my room with such few ingredients and little time!

  33. This lab was a lot of fun! As a nutrition major, I love getting to taste fruits and vegetables that I have never had before or ones cooked in new ways! This was a lab that everyone could enjoy! I made the tropical fruit salad and learned how to chop and put fruits that I have never even seen before! We also made bananas foster which was a delicious way to turn a banana into a dessert. Overall, this was one of my favorite labs so far.

  34. My group made the Root Vegetable Puree and this is the first time I've ever worked with both the parsnips and the rutabaga. The flavor of this puree was very earthy and could possibly be a good side dish for Thanksgiving dinner. The pigment of the parsnips is caused by the anthoxanthin. I really enjoyed the "Rosy Poached Pears" and the dipping sauce for the roasted sweet potatoes. Looking forward to what lab holds for tomorrow!

  35. My group made butternut squash soup. The timing of this recipe was tricky because the squash is very firm and if not roasted for long enough, it won't easily be incorporated into a puree. Roasting was also very important for its flavor development. Strangely enough, our squash soup was spicy! It was unexpected but appreciated. I wish that creative ways to prepare vegetables were in more people's repertoire for food preparation. Perhaps, then, more people would integrate vegetables into their meals!

  36. This week was very interesting without a doubt! We learned about a lot of different obscure fruits and vegetables, some I have never even heard of before. I also tasted a starfruit for the first time in my fellow classmates' fruit salad. Who knew they were so delicious? I will definitely be buying some starfruit in the near future. I also tried brussel sprouts with bacon, which does not sound like it pairs together, but it definitely does trust me! The apple and squash soup that my group made was also delicious! It may have taken a while to cut up that squash but it was well worth the wait!

  37. This past lab really showed me how to cook a variety of fruits and vegetables, while making them tasty! At first, I was extremely hesitant with the squash soup, but it was amazing. I felt that the squash would have a very gritty, unappealing texture, however, properly pureeing the vegetable solved the problem.
    Also, my group made the true sweet potatoes NOT yams. I was shocked to find out that sweet potatoes are white. Regardless, they turned out delicious with just a little bit of olive oil, salt, and pepper.

  38. So far this has been my favorite week in lab. For the first time I was exposed to an enormous variety of fruits and vegetables. My unit made banana foster. It was quite simple to make using very few ingredients. I can't wait to make this at my apartment for an ice cream topper. The best part of the day was trying the sushi. All attempts of me eating it in the past ended with me spitting it out. This was the first time I genuinely enjoyed it and I'm very excited to try different types in the future.

  39. I was ecstatic to see one of my favorite dishes this week. This is dish is butternut squash soup. This soup is very seasonal so it is usually more available in the fall and winter time. I have no eaten butternut squash soup since last winter so I was very excited when I heard we were going to try it! I really enjoyed how their was apple in the soup and also it had a little bit of a kick which I thought was well balanced. I will definitely make this recipe at other time!

  40. This was my favorite lab yet. I am not very experienced with making soups so I was nervous that it wouldnt come out as good as expected but the Butternut Squash/Apple soup was very delicious! The prep was kind of tedious and time consuming because the squash needed to be peeled which was difficult to do. This lab showed me that here are endless ways to incorporate fruits and vegetables in healthy well-balanced meals. I would have never known of all the different options if it werent for this lab. I hope to bring the Butternut Squash/Apple soup recipe home to my family and make it during the holiday season.

  41. The fruit and vegetable lab was interesting. I learned a little about some unknown fruits and vegetables. I even learned a little about how they taste in the different recipes. I personally made the butternut squash and I wasn't a huge fan of it. Some of the foods I enjoyed were the brussels sprouts and bacon and the banana foster.

  42. I really enjoyed the lab. It was crazy to see all the different kinds of fruit. One of the tables put together a fruit platter that was very nice. I was also suprised when I saw the sweet potato because it wasn't the coler that I expected it to. I enjoyed trying the star fruit but was suprised that I didn't find it to be that good. I was hoping it would be juicier but instead it was kind of rough. I had to cook with the rutabaga and parsnips and I had never done heard of these vegetables before. I really didn't like them and probably wouldn't cook them on my own time.

  43. This lab was absolutely delicious! There were so many tasty treats this week. My favorite was what my unit made, the roasted sweet potatoes with a dipping sauce. It was so good I was eating the dipping sauce even after the potatoes were gone. I learned a little about some fruits and vegetables that I had not known about before, like the south african roots.

  44. I love fruits and vegetables!! Everything we had for this lab was so tasty. My group made a root vegetable puree that started off not looking so good but ended up tasting great. I was surprised that something that good didn't contain any kind of fat at all since we boiled the veggies and just a little milk and salt and pepper. I definitely will make some of these recipes in the future!

  45. Surprisingly enough I really thought the pumpkin tofu was delicious! I never have tried tofu before and I probably would not have enjoyed it as much knowing that it was tofu! I also really enjoyed the key lime pie. My group made spanganolia (probably spelled that wrong) and I enjoyed that too! Even though I thought I didnt like spinach or feta cheese. This lab really helped me to try new foods, and new types of milk! It was nice to try some foods I wouldnt normally eat.
